Apple Cider Rice

Ingredients

2/3 c wild rice

2 c Brown's apple cider

1/2 stick butter 

1/2 c sliced almonds

1/2 c raisins

1/2 tsp salt

1/2 tsp pepper

1/2 tsp cinnamon

1/4 tsp nutmeg

1 Brown's apple, peeled, cored and chopped

Instructions

Rinse wild rice in hot tap water and drain well. In a saucepan combine rice, cider and 1 cup water. Bring to a boil over high heat, cover and reduce heat to low. Simmer until rice is tender, about 30 to 40 minutes. 

In a large skillet, melt butter. Add almonds and raisins, cook until almonds become light brown. Add spices, apple pieces and rice. Stir to combine. Cook until heated through. Serves 4.
