Autumnal Applecake
Ingredients:
3 cups organic flour
2 cups organic sugar
3 teaspoons organic baking powder
1 cup organic canola oil
4 organic eggs
2 ½ teaspoons organic vanilla extract
1/3 cup organic orange juice (can modify the amount of this ingredient a little to make the texture moister or drier)
Filling:
6 local apples, peeled and sliced small
2 teaspoons organic cinnamon
5 tablespoons organic sugar
Oven temperature: 350
Steps:
Preheat oven.
Peel and slice apples. Add cinnamon and sugar. Mix well and set aside.
Mix all other ingredients together and beat until good consistency to make cake batter.
Pour 1/3 batter into cake pan (preferably ring pan), ½ filling, 1/3 batter, ½ filling, 1/3 batter. Pour any remaining liquid from filling on top of cake. Bake for 80 - 90 minutes checking for good texture with toothpick.
