Cheesy Potato Soup
Five pound of Organic golden potatoes
one and one half pounds of pastured cow frommage blanc
one onion--medium diced
1/4 cup fresh parsley
1 and 1/2 tsp sea salt
4 cups raw whole cow milk or goat milk
2 tsp cracked ground pepper
boil potatoes till soft with skins on. Drain off potatoe water and put to the side. Mash potatoes with hand masher.
Place mashed potatoes in crock pot. Add to mashed potatoes 1 cup of potatoe water, raw whole cow milk(or goat), salt, onion, pepper and cheese. Cook on high for one and one half hours.
Pot potatoe mixture in blender and blend on medium till all lumps gone. Might need to add more milk if gets too thick for blender.
Return blended soup to crock pot and put on low. Add parsley. Salt and pepper to taste. Have a GREAT Cold Weather treat!
