Cornbread Crusted Zucchini

4 tbsp all purpose flour
4 cups cornmeal
1/4 tsp sea salt
1/4 tsp cayenne pepper
1 egg, beaten
3 zucchini cut into 1/2 in slices
4 tsbp vegetable oil

Directions:
1. Combine flour, cornmeal, salt and cayenne in a bowl. Beat egg in another bowl, keep separate.
2. Heat oil in a large saucepan.
3. Dip the zucchini slices in the beaten egg, then into the dry mixture.
4. Saute for 2 to 3 minutes on each side until golden.
5. Drain on paper towel, serve hot.

Serves 4.

Additional information:
 - Zucchini is an excellent source of Folate, Potassium, and Vitamin A. It is also very low in calories because of its high water content.
 - This recipe can be accompanied by an easy salsa containing a mixture of tomatoes, onions, lime juice, and fruits such as pineapples and mangos.
 - Feel free to substitute yellow squash for zucchini, or create a mixture of both!
