Cottage Cheese Cupcakes

Background ingredients: Butter, Cheese,
1/2 cup Vale Wood Farms Butter
2 cups brown sugar
zest of 1 lemon
1 egg
2 cups flour
1 tsp salt
1 cup raisins
2 cups Vale Wood Farms Cottage Cheese
1/2 tsp soda
Cream butter and 1 cup of brown sugar until light & fluffy. Add lemon zest and egg. Beat well. Add cottage cheese and second cup of brown sugar & mix thoroughly. Sift flour, salt, & soda. Blend with cottage cheese mixture. Fold in raisins. If desired, add 1/2 cup chopped nuts.
Bake in greased muffin pans @ 350 degrees for 30 minutes.
Makes 2 dozen.
