Background ingredients: Butter, Peaches, Milk, Walnuts, Flour, Syrup, Raw Milk,
Dough
- 2 to 2 ½ cups of unbleached self-rising flour (preferably King Arthurs)
- 1 whole egg plus 1 egg yolk
- 1 cup sugar
- ½ cup unsalted butter
- 1 to 2 tablespoons of milk (2% or whole)
- Some extra Flour for dusting
Topping
- 12 ounces of La Dorita Dulce de Leche (enough to spread generously over the entire tarta)
- 1 large can of peach halves in light or heavy syrup (drained)
- Optional: walnuts
Oven 350°
Dough
- To make the sweet dough, first put all of the dough ingredients into a food processor and pulse together until the ingredients form pea-like balls. Flour both hands and pour onto a kneading surface. Gradually incorporate all of the ingredients by rolling, pushing and folding it over just until you have moist dough. You may add more flour or drops of milk as needed to reach the right consistency. Lightly flour the top of the dough. Make it into a roundish shape and place it on a baking tray. Put in the refrigerator for ½ an hour to allow the dough to set. The dough can be used immediately or wrapped in plastic wrap and stored in the refrigerator for 1 day.
Bake
- Preheat oven to 350°
- Butter the bottom and sides of a deep dish round cooking sheet or tart pan and line with parchment paper for easy removal of the tarta.
- Press the dough into the bottom of and sides of the pan until you have a symmetric crust.
- Bake for 25-30 minutes until golden brown. Cool on wire rack for 10 minutes. Remove tarta carefully from cooking sheet by grabbing the parchment paper. Allow to cool completely. (Optional: While the tarta is cooling, but still hot, you may puncture with a fork and moisten with a sweet liquor of your choice)
Add the topping
- With a spatula, spread a generous layer the dulce de leche mixture over the tarta
- Arrange the grilled peaches all over the pizza (sprinkle in halved walnuts at this time if you are opting for a richer result)
- Slice and enjoy!
- Cover and store cake in refrigerator.
- You may also use canned pear halves for this recipe. This is a nice seasonal twist on the tarta during the winter months.
