DULCE DELICIOUS THUMBPRINT COOKIES

Background ingredients: Butter, Milk, Flour, Teas, Raw Milk,
Dough
- 2 to 2 ½ cups of unbleached self-rising flour (preferably King Arthurs)
- 1 whole egg plus 1 egg yolk
- 1 cup sugar
- ½ cup unsalted butter
- 1 to 2 tablespoons of milk (2% or whole)
- Some extra Flour for dusting
Topping
- 12 oz. La Dorita Dulce de Leche
- 9 oz. package Hershey Kisses
Oven 350°
Dough
- To make the sweet dough, first put all of the dough ingredients into a food processor and pulse together until the ingredients form pea-like balls. Flour both hands and pour onto a kneading surface. Gradually incorporate all of the ingredients by rolling, pushing and folding it over just until you have moist dough. You may add more flour or drops of milk as needed to reach the right consistency. Lightly flour the top of the dough. Make it into a roundish shape and place it on a baking tray. Put in the refrigerator for ½ an hour to allow the dough to set. The dough can be used immediately or wrapped in plastic wrap and stored in the refrigerator for 1 day.
Bake
- Preheat oven to 350°
- Line a cookie sheet with parchment paper for easy removal of cookies.
- Shape dough into 1 inch balls. Press thumb gently in center of each cookie. Bake for 9 to 11 minutes or until golden brown.
- As soon as cookies are removed from oven, spoon about 1/4 teaspoon of La Dorita dulce de leche in thumbprint. Gently press Hershey Kiss in center of each cookie, pressing down so cookie cracks around edge.
- Carefully remove from cookie; cool on wire rack.
- If dulce de leche begins to run, cover and store cookies in refrigerator.
