Eggplant Wraps

1 Eggplant

Feta Cheese

1c Flour

 Salt

Pepper

Garlic Powder

canola oil (for frying)

Slice the eggplant on a mandeline (2 inches).  place on a sheet pan and salt very lightly.  Let the salt draw water out of the eggplant for about 1/2 hr.  in mean time, Season 1 c flour with 1tbsp of pepper and 1tbsp of garlic powder, (Adding more salt can make the eggplant too salty).  When 1/2 hr has been up, dab eggplant with a towl, and dredge with flour.  Add your canola oil to pan and make sure its really hot (Just enough oil to have a small pool in the pan).  to test the heat of the oil, sprinkle a little flour in oil and if it sizzles, its ready.  Place eggplant in pan and brown on both sides (about 30 sec. on each side).  place on a papper towl and repeat. 

When all of the eggplant is fried, take about 2oz of feta cheese and place close to on end of the eggplant and roll untill it is wraped.  repeat process.
