Essential Eating Quinoa with Asparagus

2 cups water
1 1/2 cups quinoa, rinsed and drained
2 tablespoons melted butter
1 pound asparagus, steamed
1/2 cups fresh basil
1/4 cup snipped chives
1/2 cup diced roasted red peppers

Bring water to a boil in a 2 quart saucepan.  Add quinoa and return to a boil.  Reduce heat, cover and simmer until the quinoa is tender about 15 minutes.  Meanwhile, steam the asparagus in a separate pan for about 4 minutes.  Chop the basic and chives and melt butter.  Transfer the quinoa to a large bowl and toss with the melted butter.  When the quinoa has cooled slightly, add the remaining ingredients.  Toss and serve.  Serves 6
