Essential Eating Sprouted Pizza

1 1/8 cup filtered water
3 tablespoons olive oil
3 cups Shiloh Farms Essential Eating Sprouted Flour
1 ½ teaspoon sea salt
1 ½ teaspoon maple sugar
1 ½ teaspoons yeast
Suggested toppings
1 cup pizza sauce
2 cups spinach, cooked and chopped
4 chopped scallions
8 ounces sliced mushrooms
¼ cup reconstituted sun-dried tomatoes
¼ cup black olives
2 teaspoons dried sweet basil
2 teaspoons dried oregano
1 teaspoon Herbamare
½ teaspoon pepper
½ cup Yogurt Cheese, drop by teaspoonfuls on top
1 tablespoon paprika, sprinkled on top
Preheat oven to 500 degrees.
To make dough by hand: place ingredients in a large bowl and mix well. Remove dough from the bowl and knead into a ball. Coat bowl with olive oil; place dough in bowl and turn once to coat with oil. Cover with a clean dish towel and let stand for 30 minutes or until doubled in size. Roll into desired size. Place on greased baking pan; add desired toppings. Bake 8 -12 minutes. Or a pizza stone may be used. Preheat stone, slide pizza onto stone with pizza wheel and bake as above.
To make dough in a bread machine: Place ingredients in the baking pan of a bread machine in the order listed. Program the machine for pizza dough and press start. Remove from machine; roll into desired size and bake as listed above.
Makes One 15-inch thick crusted or two thin crusted pizzas
