Fallywalker's Cheesy Campfire Taters
Yield: 4-6 servings
Ingredients:
roughly 2 pounds of taters, small cubes
1 bell pepper, diced
1 red onion, diced
2 cloves of garlic, minced
salt, pepper & garlic powder to taste
colby jack cheese, cubed
drizzle of olive oil
2 tablespoons of margarine
aluminum foil
warm campfire coals
Preparation:
Gather some nice warm campfire coals for a bed. On a piece of aluminum foil- add the potatoes, pepper, onion, garlic, margarine and drizzle with olive oil. Salt and pepper generously, add garlic powder & fold the ingredients into a tightly sealed package. Place directly on the warm coals and cook for approximately 30 minutes, or until tender. Once the potatoes are fork tender- taste and re-season. Add a bunch of colby jack cheese and mix around a bit. To get the delicious smokey campfire flavor- during this final stage, return the package onto the coals & allow the package to breath in some of the smoke- don't seal it. When the cheese is melted, remove & serve immediately.
