Green Beans with Bell Peppers
1 lb. green beans (ends trimmed)
2 tsp. olive oil
1 clove garlic, finely chopped
1/2 onion, halved and sliced
1 bell pepper
- can be any mixture of red, orange, and yellow to equal 1 pepper
Directions:
1. Bring a large saucepan 3/4 full of water to a boil. Add beans and cook until they turn bright green, about 1-3 minutes.
2. Drain beans, plunge them into a bowl of ice water to stop the cooking (blanch). Drain again and set aside.
3. In large frying pan, heat olive oil and add bell peppers, green beans, onion, and garlic and stir for about 3 minutes.
4. Season with salt and pepper as desired.
Serves 6.
Additional Information:
- Green beans are an excellent source of Vitamin C, Vitamin K, and manganese.
- 1 cup of green beans provides 25% of your daily value for Vitamin K.
- Blanching is a term used for plunging foods into boiling water for a few seconds/minutes, then removing and placing into ice water. The food does not cook all the way through so crisp texture is preserved.
