Goat meat is extremely lean (leaner than beef, pork, chicken, etc.). Goats tend to gain fat around their organs rather than in their muscle/meat. Because of this, goat meat should be cooked very slowly at low temperatures and with alot of moisture. This will produce a tender and very flavorful piece of meat. Garlic, lemon juice and/or butter are great additions to any goat dish. Have fun experimenting!
Goat meat is great for stews, crock pot recipes and roasts!
