Mashed Potatoes

Background ingredients: Potatoes,
Take a few pounds of locally grown potatoes. Peel 'em. Dice 'em.
Boil 3 or 4 quarts of water. Add the potatoes.
Boil them until you can easily cut through them with a dull utensil.
Drain 'em. Keep a little potato water.
Now mash 'em and season 'em.
Eat 'em.
