PEAR BLEU CHEESE CROSTINI

Makes 16 pick-me-ups

Ingredients:             
16 baguette slices, each ½-inch thick      
2 large pears, firm but ripe, cored and cut into ¼-inch dice      
1 tablespoon unsalted butter       
1-2 tablespoons honey       
1 teaspooon balsamic vinegar       
½ teaspoon finely chopped fresh rosemary       
salt and freshly ground black pepper       
½ cup crumbled bleu cheese       




1.    Preheat oven to 425ºF.  Place bread slices on sheet pan. Toast bread in oven for 10 minutes.  Change oven to Broil mode.


2.    Meanwhile, heat skillet over medium heat.  Add butter and pears and sauté until beginning to soften.  Add vinegar and honey; season to taste with salt and pepper.  Add rosemary and cook until pears are tender.


3.    To assemble, top each toast with a healthy mound of pear mixture.  Crumble cheese on top.  Place pan under broiler for 2-3 minutes, until cheese just melts.   Serve immediately.
