Samosa Empandas
Empanda Dough-
6 oz. butter in the food processor
Add 3 C all-purpose flour & 1 T salt
Turn it on & add an egg, then drizzle in 4-5 Tbs. water until a dough ball is formed.
Roll out your dough into 5 inch circles. Perfection not necessary.
Filling-
Depends, sometimes I do mashed sweet potato w/ black beans, usually I do a quick mashed potato yellow curry w/ peas. Boil & mash taters, sautee onions & garlic in butter w/ peas and yellow curry, mix it all up.
Fill each round with 1 T of your choice filling and fold over. Crimp the edges closed with a fork and brush with egg white. Bake for 20 mins at 350. YUM!
