Simple Applesauce

You'll need: apples, a lemon, a cinnamon stick, water and sugar.

Peel, core and slice apples (as you do this, put apple slices in a bowl or pot of water along with the juice from the lemon -- this keeps them from browning).  When all apples are done, drain the lemon-water and put the apples in a pot, adding lemon peel, a cinnamon stick and just enough water to cover.

Bring to a boil, and then reduce heat to a low boil.  How long you cook them depends on your taste -- more for smoother sauce, less for chunky.  Cook somewhere between 10 and 20 minutes.  During the last 2-3 minutes, add some sugar (a mix of white and brown sugar is nice).

Strain the cooked apples through a mesh strainer (reserving some of the cooking water).  At this point, you can either mash the apples using a potato masher, run them through a ricer, or process in a food processor.  Add a little of the reserved liquid if you like.

All of this should be done "to taste" -- it's YOUR apple sauce!
