Spicy Eggplant Salad
Ingredients:
- 2 large eggplants, sliced
- 1 bell pepper, diced
- 3 tomatoes (regular or plum), diced
- 1 small onion, chopped
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
- 2 tablespoons fresh parsley
- 2 tablespoons olive oil
- salt and pepper to taste
Directions:
Brush olive oil on eggplant slices and grill (or bake at 350 degrees for about 45 minutes) until golden brown on both sides. The eggplant should be tender. Allow slices to cool before cutting into bite sized pieces. Mix remaining olive oil with peppers, tomatoes, onion, garlic, lemon juice, cumin, cayenne, and parsley. Add in the eggplant and season with salt and pepper. Serve warm over beans or pasta, or chilled as a side.
