10# Ground Pork
3 oz Salt
4 Tbsp Sugar
4 Tbsp Fennel Seed
2 Tbsp Coriander
3 Tbsp Spanish Paprika
1 tsp Cayenne Pepper
8 Tbsp Oregano Leaves
8 Tbsp Basil Leaves
4 Tbsp Red Pepper Flakes
4 tsp Black Pepper
1½ cups Ice Water
½ cup Red Wine Vinegar
1. Mix all ingredients thoroughly. Stuff into casings or cook losely.
